Chocolate Cake for Two
This mug cake embodies everything a chocolate cake should be — dark, decadent and so rich, the only way to wash it down is with a cold glass of milk. This tiny treat comes from Sarah Fennel from Ann Arbor, Mich., who runs the baking blog Broma Bakery, which she started in college after becoming homesick for her mother’s cookies.
“The secret to this cake being done in 30 minutes? Cooking it in the microwave. But unlike some mug cakes, this one doesn’t taste spongey at all,” she writes. “I couldn’t help but marvel at the texture — it’s just like that of a cake from the oven! “
To make this cake Fennel greases three large mugs and fills each with a ½ cup of chocolate batter, and pops them one-by-one in the microwave for 1 minute each. She flips the cups to remove the cakes, and allows them to cool to room temperature. During this time she whisks cocoa, powdered sugar, butter, and milk into a light and fluffy frosting. She then ices the top of each layer before stacking and finishes it with dark chocolate shavings. If you’re craving chocolate and in a pinch for time, this has your name written all over it.
